At the core of all food are the ingredients. At Crumb, we use only ingredients of the highest quality. No nasty chemicals, no preservatives, no artificial food colorings (seriously, who wants to eat petroleum products?). We source as many of our ingredients as we can from North Carolina. We feel that is important to keep as much of our money in the local economy as possible. Obviously, not everything we use is produced or grown in North Carolina (for example, no oranges or lemons are grown here, salt is not produced here, and neither is bourbon) but we do our best.
- Our flour comes from Lindley Mills in Graham, NC. Lindley Mills has been milling flour since 1755 and has been organic since the 1976. The Battle of Lindley Mills of was a decisive battle during the Revolutionary War in North Carolina. Today the mill is being run by the ninth generation of the Lindley family.
- Our dairy comes mostly from Maple View Farm in Orange County, NC and contains no hormones or antibiotics.
- Our eggs comes from Latta’s Egg Ranch in Hillsborough, NC. Consistently some of the best eggs we’ve ever had.
- Most of our produce comes from NC farmers and from what we can pick ourselves. Foraging within a couples of miles of our kitchen has yielded wild mulberries, blackberries, honeysuckle, and many herbs.NC farms we’ve sourced ingredients from include Coon Rock Farm, Wild Onion Farms, and Brushy Mt. Apples to name a few.
- We use many North Carolina beers in our baking too. Beers from Mother Earth in Kinston, Big Boss in Raleigh, and Fullsteam in Durham (along with many others) have all played a role in our products.
We wrote a blog post awhile back about our experience sourcing local ingredients. You can read the article here.
